When Catherine II ascended to the throne, according to her order, they organized a large-scale entertainment costume procession at Maslenoya Nedeli. For several days a masked procession moved around the city, representing the vices of people, including embezzlement and red tape of officials.

Over time, "fun" was significantly improved.On large areas began to build slides of wood and beautiful pavilions. Hilarious fairs were organized everywhere, selling sweets, delicious cakes, baked apples, nuts, flavored tea and red pancakes.

In the villages there was no place for big booths. On Shrovetide, local residents took an active part in taking a snowy city, which was a large fortress built of snow. The most favorite occupation was sledding.

On Shrovetide people called the sun god Yarila, who banished the winter and prompted the spring. All week the hostesses cooked rosy pancakes, which strongly resembled a warm sun. Not surprisingly, they still remain the main symbol of the holiday.

Carnival has one more symbolism. It's about a stuffed animal named Maslen. It was made of straw and dressed in a bright outfit. On the last day of the Pancake Week, the doll was burned. She personified the cold winter, for the expulsion of which the fire was used.

Festive menu for Pancake week

Within the framework of the Pancake Week, fish, dairy and mushroom treats were present on the table. Of course, on holidays no one ate meat dishes.

In honor of the holiday, a big cake called the chicken currant was prepared. The kids were pleased with sweet brushwood. At the beginning of the second half of the Pancake Week, cooks baked the larks. This baking in the shape of birds symbolized the arrival of spring.

Without a doubt, the main festive dish of Shrovetide was pancakes, for the preparation of which they used flour and various fillings - caviar, mushrooms, cottage cheese, jam.
