How to cook chicken with noodles

You will need
    • For broth:
  • 1 chicken
  • 2 onions
  • 1 carrot
  • 1 parsley root
  • 1 bunch of dill
  • 1 tbsp. l butter
  • allspice
  • salt.
  • For noodles:
  • 1.5 cups flour
  • 1 egg
  • 0.5 glass of water
  • salt.

To create this dish you need to use a whole chicken carcass. For cooking tasty broth is very important. If you take white or red meat separately, the taste will not be the same. Rinsechickenin cold water. Put the carcass in the pan. Fill with cold water, add salt to taste and cook over low heat. In no case do not pour boiled water for broth meat! The protein in the meat in the first few minutes will be minimized, and the chicken will not give the water its full flavor. Then the broth does not work nourishing.
Take one medium carrot. Wash it under the tap, peel it, cut it in half. Then you will need two medium bulbs. Peel them from the husk. Remove the foam from the broth, then put the bulbs, carrots, parsley root and 2-3 peas allspice in it. Leave to boil on low heat for 1 hour.
Take out the prepared meat, let it cool, then cut the carcass into portions. Each serving of meat should weigh approximately 100-150 g.
Knead the dough for noodles. First pour the flour into a container with high edges. There break the egg, add salt, mix with a fork. Then pour water into the dough in small portions, stirring constantly. The dough should be steep, so when it becomes difficult to mix the mass with a fork, start kneading with your hands. If the dough after kneading is soft and plastic, add a little more flour for elasticity. Divide the dough into 2-3 pieces, make balls from them. Then roll each thinly. Lightly dry the sheets of dough. After that, with a knife, cut them into strips 4-5 mm wide. A little more dry.
Strain the broth through cheesecloth. Then again pour into the pan and put on the stove. Bring to a boil, put the butter in it and pour the noodles. Stir the noodles so that it does not stick together in the first few minutes. Stir until broth boils. 3-4 minutes after boiling the pan, remove from heat, cover with a lid and wrap in a warm towel. Insist 30-40 minutes.
